Restaurant Security Systems: The Register, the Back Door and the Walk-In

Restaurants run on thin margins, high staff turnover and a lot of cash. That combination makes them one of the more targeted small businesses, and most of it is not the kind of theft owners picture.

The three places money leaves

The register. Voids, comps, no-sales and cash handling. Reviewable only if a camera is framed on the drawer and the transaction together, which is why POS integration earns its money here more than in most retail.

The back door. Product leaving during deliveries or at shift change. Frequently uncovered because it is not where the work happens.

The walk-in and dry storage. Where inventory shrinkage that never reaches a plate actually occurs.

Coverage that matters

• Over each register, tight on the drawer.

• The back door, both sides, at head height.

• Walk-in and dry storage entrances.

• The bar, where pour cost and comps concentrate.

• The dining room, wide, mainly for liability rather than theft.

• The parking lot and any patio, for after-hours and slip-and-fall claims.

Liability is half the reason

Slip-and-fall claims are a real cost in food service, and dining room and entrance coverage settles them faster than any statement. So does patio and parking lot coverage. Set retention long enough that a claim filed weeks later still has footage behind it.

The Florida audio rule

Florida requires two-party consent for recording oral communications. Video in a public-facing business is generally straightforward. Audio is a different question with real exposure, and restaurant cameras frequently ship with microphones enabled by default.

The safe default is audio off. If you have a specific reason to want it, ask an attorney rather than an installer.

Kitchen conditions

Grease, steam and heat are hard on cameras. A dome in a kitchen accumulates a film that softens the image within months. Cameras in cook lines need housings that can be cleaned and a service interval that assumes they will need it.

Access control worth having

Back door and office access on credentials rather than keys, given turnover. Knowing who opened the back door at 2am, and being able to revoke a departing employee the same day, is the whole value.
